Cherry Cheesecake Recipe


Every year for our birthdays (they are three days apart) I make Adam and me a cheesecake. You'd think after all this time I'd have my recipe perfected, but after last year's flop I was a bit worried about the final results of this year's cake. It turned out perfect though. So maybe, after almost four years I have it down? 

Here's my recipe. It's easy, quick to make, and (at least this year) delicious.

Easy Cherry Cheesecake: 

You will need:

1 cup of white sugar.

2 T. of white flour.

1/4-1/2 cup of half and half.

3 large eggs.

2 eight ounce blocks of cream cheese.

1 can of cherry pie filling.

1 1/2 cups of crushed graham cracker crumbs.

1/4 melted butter

To make:

Preheat oven to 400 degrees.

Mix the graham cracker crumbs, and the melted butter together. Press mixture into the bottom of one 9 or 10 inch springform pan.

In a large bowl, combine cream cheese, mix until smooth. Add the white sugar, the flour, and the half and half. Blend until smooth. Pour batter into prepared pan.

Bake at 400 degrees for 10 minutes, then turn oven temperature down to 200 degrees and  continue baking for 1 hour, or until filling is set. Let cheesecake cool, then refrigerate.

Before serving pour cherry pie filling on the top.
