Crock-Pot Bacon & Potato Chowder
You will need:
4 large potatoes, peeled and diced.
1 cup of bacon, cooked and crumbled.
1 small can of cream of chicken soup.
About 3-4 cups of chicken broth.
1 medium onion, diced.
2 cups of cheddar cheese, grated.
1 cup of sour cream.
salt and pepper to taste.
Mix everything but the sour cream and salt and pepper in the crock-pot. Cook on high for 4-6 hours, or until the potatoes are tender.
Stir in sour cream and season to taste.
Serve hot with bread.
This was a super easy meal, and you can make it even easier by substituting bacon bits for the cooked bacon.

Make it easier still by subbing diced ham or summer sausage. That's how I usually make this. Delicious!
