Easy Homemade Tomato Soup.
4 cups chopped fresh tomatoes
1 chopped onion
2 whole cloves of garlic
2 cups chicken broth
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
White sugar--to taste
A large pinch of Italian herbs.
To make:
- In a stockpot, over medium heat, combine the tomatoes, onion, garlic, and chicken broth.
- Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors.
- Remove from heat, pour into a blender, and blend everything until smooth.
- In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux.
- Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest.
- If you would like it a bit thinner add milk, if thicker make more roux.
- Season with herbs, sugar, salt, and adjust to taste.
Serves 6.
Delicious with crackers, sour cream and grilled cheese sandwiches.
I definitely need to make homemade tomato soup sometime. I always cheat with the condensed versions! I bet the stuff from scratch is SO much better!! :)
ReplyDeleteKaty, I actually really DON'T like tomato soups at all, but Adam does, so I decided to make it. And I liked it! It really is wayyyy better than the canned stuff.
