Cheesy Chicken and Potato Casserole.

I made this for dinner last night and it was soooo good. It's total comfort food, very similar to mac and cheese, except it's not mac and cheese ;) It's hearty, buttery, cheesy, and perfect for these cold Autumn nights! 

You will need: 

6 cups of cooked and cubed potatoes.
4 cups of cooked and cubed chicken.
2 tablespoons of butter.
1 onion, chopped and sauteed.
8 ounces of shredded cheddar cheese.
1 can of cream of chicken soup.
1/2 cup of milk (plus a splash more).

To make: 

Grease a 9"x 13" pan. Cook the onion in the butter until soft. Mix chicken, potatoes and onion and put in the pan. Mix the remaining ingredients and pour over the top. Bake at 350 for 35 minutes. Pull out, stir, and add a good splash of milk. Place back in oven and cook 15 more minutes, or until bubbly on top.

Serves 6.
