Crock-pot Beef Stew.
This beef stew is my favorite. It's easy, filling, it really only takes a few minutes to throw together, and then it can cook all day in the crock-pot.
The amounts of everything you need will really vary according to your taste. More meat, less veggies, more broth, etc.
Anyway, this is the amounts of everything that I used.
3/4 of a lb. of good stew beef
3 large potatoes
1 large onion
half a bag of baby carrots
beef broth-about 2 cups or more.
1 cup of broccoli
1 cup of green beans
salt and pepper.
To make:
In your crock-pot throw everything except the broccoli, and green beans. Make sure that the broth is at the top (not over, but almost) of all your stuff.
Let cook on low for about 6 hours.
Add the gr. beans and broccoli and let cook until they are tender. Season with salt and pepper.
Makes enough to feed approx, 6.
