Caramel Pumpkin Spice Muffins.

It's pumpkin everything time! And while I hate making pumpkin pies (I make the worst pies ever), I love baking muffins. This recipe is quick-only takes about 20 minutes total-and they are so good!


2 large eggs
2 cups pumpkin puree
1/2 cup caramel sauce
1/4 cup oil

1 3/4 cup sugar
2 1/2 cups flour

1/2 teaspoon each: ground ginger, and cinnamon
1 teaspoon baking soda
1/2 tablespoon cream of tarter
pinch of salt

Preheat oven to 375.

To make: 

1.mix eggs, pumpkin, caramel sauce, and oil all in a large bowl. add sugar and stir in well.

2. add all the spices and salt. Give a quick stir.

3. add the flour, and mix just until it's all mixed together well. do not over mix.

Fill greased muffin tins 3/4 full. bake until an inserted toothpick comes out clean.
