Loaded Nachos {Recipe}


If you are anything like us, then you know that tacos are the best! Coming in a close second are nachos.
Sundays are our "family" day, and I am trying to get back into cutting down on the cooking as much as possible that say (that means overnight casserole or baked oatmeal for breakfast and crock-pot meals for dinner) and this past Sunday I wanted a quick and easy meal for lunch. 
Enter some super easy nachos! 

You will need: 

One big bag of tortilla chips.
Cook and shredded chicken breast  (I used 2). You can also substitute gr. beef for the chicken (or beans, if you wanted to make it vegetarian). 
1 88 ounces jar of green olives, chopped.
2 cups of shredded cheddar cheese.
1 cup of Salsa.
1/2 (or more) of sour cream.
Chopped cilantro (1/4 of a bunch, or 1/4 cup chopped).
Hot sauce

To make:

Layer chips on a large pan.
Top with shredded chicken, cheese, cilantro, and a generous sprinkling of hot sauce. 
Put in a 350-degree oven for about 10 minutes (or until the cheese is melted). 

Pull out and top with salsa, olives, and sour cream.
Serve immediately.

It feeds a crowd! 

This recipe is easy to play with and change up. Switch black olives for green, greek yogurt for sour cream, or beans for meat, etc.

  1. I know I am in the minority but I am just not a taco or nachos fan. My family however love this kind of stuff. I had never thought about doing nachos with chicken, might put these on the menu this week.
