after the weekend: packing, shopping, and baking


Things are busy, busy around here! I thought I'd pop in with a quick update, even though I'm sitting surrounded by packing boxes, tape, and chaos. 
Last week we signed papers and got the keys but we are not "officially" moving in until this Saturday. We are going to try and move over the plants, bird and fish though on Friday, to get that out of the way before the crazy mad rush of moving starts.

I still don't have any pictures of the new place, can you believe that? Every time we visit I'm so busy looking around and deciding where things will go I have no time to take photos. Oh, well, next week, right? 

Today we have more packing, laundry to fold, packages to pick up from the post office, and plants to water. I'm thinking we'll have pizza for dinner tonight (maybe a mushroom and sausage one?).


Last week I made banana bread (and muffins). It's such a super easy recipe and it whips up really fast.  About 15 minutes and it's in the oven. That's my kind of baking right there ;)

Easy Banana Bread (and/or muffins)

You will need: 

3 ripe bananas, mashed
1 cup white sugar
1 egg
1/4 cup melted butter

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
a pinch of cinnamon.

chopped nuts (optional)

To make: 

Preheat oven to 325 degrees.. Grease a 9x5-inch loaf pan.

Combine bananas, sugar, egg, and butter together in a bowl. Mix flour and baking soda together in a separate bowl; stir into banana mixture until batter is just mixed. Stir salt into batter. Pour batter into the prepared loaf pan.
Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean (about 1 hour).

If making muffins just grease your muffin tin well and bake them for about 15 minutes.

  2. Be sure to take pictures of your present home so when your little grows up she well know what her "first" took place. Her first home,her first steps etc..
