Easy Homemade Tomato Soup.


What you'll need: 

4 cups chopped fresh tomatoes
1 chopped onion
2 whole cloves of garlic
2 cups chicken broth
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
White sugar--to taste
A large pinch of Italian herbs.

To make:
  1. In a stockpot, over medium heat, combine the tomatoes, onion, garlic, and chicken broth. 
  2. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors.
  3. Remove from heat, pour into a blender, and blend everything until smooth.
  4. In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux.
  5. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest.
  6. If you would like it a bit thinner add milk, if thicker make more roux.
  7. Season with herbs, sugar, salt, and adjust to taste.
Serves 6.
Delicious with crackers, sour cream and grilled cheese sandwiches.

  1. I definitely need to make homemade tomato soup sometime. I always cheat with the condensed versions! I bet the stuff from scratch is SO much better!! :)

    1. Katy, I actually really DON'T like tomato soups at all, but Adam does, so I decided to make it. And I liked it! It really is wayyyy better than the canned stuff.
