Tortellini Sausage Stew


Since this stew is so hearty, comforting, and delicious, it's probably way more fitting for chilly October days and not the middle of August. However, I'm sharing the recipe now since I'm sure by the time some cold weather rolls around I'll have forgotten all about it. Anyways, it's not that long until Fall (gasp, did I really just say that? Nooooo).

You will need: 

About two cups of tortellini.
One package of smoked sausage (kielbasa). Sliced into half inch rounds.
One small (8 ounce) can of diced tomatoes.
Five cups of chicken stock.
Three chopped carrots.
A large handful of chopped kale.
One cup of frozen corn.
Half a cup of frozen peas.
Half a chopped onion.
Salt, pepper, red pepper, and Italian spices.

To make: 

Bring chicken stock to a boil. And add onion, carrots, canned tomatoes, and tortellini.
When tortellini is almost tender add kale, corn, and peas.

When everything is hot and tortellini is tender add spices to taste.
If you need to add more stock do.

Serve hot with fresh bread.
