For lunch.

These two recipes combined make a wonderful lunch meal {also a great way to use up all the spinach in the garden!}. I made both the other afternoon, added a salad to the side and it was just perfect.

:Cream Of Spinach Soup:

1 1/2 cups of chicken stock.

1 {10 ounce} package of spinach.

3 Tablespoons of butter.

1/4 cup of flour.

3 cups of milk.

Salt and pepper and nutmeg to taste. 

1. cook spinach in chicken stock until it is tender.

2. Melt butter in a pan until it is melted, slowly whisk in the milk.

3. Add spinach mixture to butter/flour mixture. 

4. Using a handheld blender, blend just long enough to thoroughly mix everything and so that all the spinach is blended.

5. Season with salt, pepper and nutmeg.

Serve hot with applesauce muffins {recipe below}. Makes 4 servings.



:Whole Wheat Applesauce Muffins:

1 1/2 cups rolled oats.

1 1/4 cups whole wheat flour.

1/2 cup packed brown sugar {or white, but it is better with brown}.

1 teaspoon baking powder.

3/4 teaspoon baking soda.

1 teaspoon ground cinnamon.

1/2 teaspoon salt.

1 1/2 cups unsweetened applesauce.

1 egg.

1. In a large bowl, combine the first seven ingredients. 


2. In another bowl, combine the applesauce and egg. 

3. Stir into dry ingredients just until moistened.

4. Preheat oven to 400 degrees. Grease muffin tins and fill  3/4 full with batter. Bake for approx. 15 minutes, or until a toothpick comes out clean.

Makes about a dozen muffins.
