What's Been Cooking Lately.


+making pickles (I'm working at crossing stuff off my Summer Bucket List).

+cold brew coffee is all the rage so I decided to give it a try. It turned out a bit weak but I'm thinking I should have let it brew a bit longer than the 12 hours that I did.

+a Summer Veggie Quiche (recipe coming soon!)

+poached eggs and toast for breakfast.

+dinner the other night. Cheese Stuffed Chicken, new potatoes from our garden and a summer salad.

+potatoes and garlic from the garden. I really love when we can start harvesting, there's really nothing at all like eating your own food that you grew, is there?

+we've been eating lots of salads lately since it's been so hot and I often really don't feel like cooking. Or eating, for that matter.

+my sweet little Princess eating strawberries and cheerios the other morning.

  1. I've been reading your lovely blog a a little while now...I really enjoy it. I just had to comment on your perfect, yummy looking poached eggs! They're my favorite way to eat eggs, but I just can't get them right. Mine are either undercooked, overcooked..... And certainly never as pretty as yours. Any tips?

      I always has trouble poaching eggs, and then a while back a found a vintage eggs poacher. It makes two at a time and works SO well! It's basically a tin that sits inside a small pan with a lid. I grease the little tin, and place two eggs in, put water in the bottom and close the lid and cook for about 5 minutes. I think if you look online you should be able to find one. Sorry I can't be of much more help than that!

  2. It all looks good! for the cold brew coffee - I do this all the time, regular coffee hurts my stomach - get a nice bold grind. Use 2 ounces (weighed on a scale) to 4 cups of water and let it sit at least 12 hours. Then to make the coffee cold - i use 2/3 to 3/4 of a cup, add a splash of half and half (maybe a teaspoon or so) and fill with almond milk. Add sweetener to taste and ice. the flavored coffees work nice for this, I like Folger's Caramel Drizzle or Dunkin Donuts Cinnamon Bun.

      Okay, so maybe I didn't use enough coffee! That might have been my problem. I think I'll give it another try now and see how it goes.
