Summer Veggie Quiche


Around here we really love quiche. At one point I was making it so much Adam had to ask me to take a break for a while!
I think my favorite thing about quiche is that it's cooked all in one pan, is quick to make and is good either hot or cold.


Summer Veggie Quiche Recipe.

You will need:


Six large eggs well beaten.
A splash of milk.
One cup (or more if you like your quiche cheesy) of grated sharp cheddar cheese.
Half a green pepper.
Half a large onion.
One medium size yellow squash.
One medium tomato.
One nine inch pie crust.
Salt, pepper, a teaspoon of chopped parsley and a pinch of chopped thyme.

To make:

Beat eggs and then add milk and cheese, mixing again a few times to blend it all together.

Chop pepper, onion, and squash, and then saute in a pan until they are all soft (but not mushy!). 

Grease a nine inch pan and place pie crust in the bottom.

Toss in veggies.

Pour egg mixture over the top.

Slice tomato into thin slices and place on top.

Sprinkle on salt, pepper and herbs. 

Bake on 350 for about 45 minutes or until a fork comes out clean.

  1. Yum! I made quiche a few times this summer too! :) Sooo good! Found a cheesy crust on pinterest but I didn't have sharp cheese on hand so while it was good, it wasn't strong enough cheesy favor. :)

  2. ....so visually appealing too. I love quiche both hot and cold. Now that all our hens are laying quiche is definitely back on the menu.
