what's cooking?

Both Adam and I love to cook. We also both love to eat (which is probably good, because of the cooking thing). One of our favorite things to do is both get in the kitchen and make something yummy.
Seeing that I talk so much about food, I thought I'd make a little list of some of our favorite meals and kinda overall what we eat.
We try to eat low sugar and I don't really eat that much bread, or gluten at all, for that matter.
I always have a big thing of orange juice in the fridge and (for me) kombucha.

Breakfast:
Soaked oats. Or more usually eggs.
I also have greek yogurt with fruit or syrup.
On weekends I make my Happy Eggs (scrambled eggs with peppers, onions, cheese, tomatoes and stuff), or we have waffles, french toast or an egg casserole.

Snacks:
Fruit, potato chips, crackers and cheese, and popcorn.

Lunch:
Adam is at work during the week so I usually have a big salad. I mix the lettuce with olive oil, salt, pepper and lemon juice and then add any of the following:



hard boiled eggs.
peppers
carrots
onion
cucumber
mushrooms
tomatoes
radish
olives
garbanzo beans

I also love to have tuna or chicken salad for lunch.
or I'll make hummus or dip, and have that with veggies.
I also 
make big things of Cabbage Salad  to go with dinner, and if I have leftovers I'll have that for lunch.
Pasta Salad is good in the summer. and easy to make.

Dinner:
Fish fillets cooked in the oven with butter, lemon, salt and pepper. serve with rice and steamed veggie.
Stir fry--lots of veggies, not a whole lot of meat..and rice
I haven't made Stuffed Peppers in a while but they are a nice change for every now and then.
I make kabobs with chicken or beef (marinate the meat in olive oil, ginger, and braggs), and lots of veggies (radish, new potatoes (small ones), onion, green beans, squash or mushrooms. I serve them with corn on the cob, or cabbage salad.

Fish tacos. One of our all time standbys.
Soup---chicken, or corn chowder, or beef stew, taco soup, french onion, white bean with ham--serve with cornbread. I make soup about once a week.

Fish chowder. It's a favorite of ours. We love fish and have it at least once a week.
Pork chops--cooked in crockpot with sauerkraut, onion, and beer, serve over mashed potatoes.

Shepherd's Pie is a nice way to up veggies, and I use any meat--not just gr. beef.
Quiche. I throw any and everything in it--potatoes, onion, mushrooms, leftover rice, peppers, cheese and any meat..I put chicken, beef, pork, ham, turkey, etc in mine...or make it a vegetarian meal and go meatless...

Adam makes a mean  meatloaf, so we have that once in a while when he's got plenty of time.
We also love marinated steak, served with mashed potatoes and peas.
I also make a roast chicken dinner, and then boil down the chicken and make soup, chicken and dumplings, or chicken pot pie with it.
Homemade pizza. I make that fairly often too.

  1. Yum! Sounds great, Rosie! :) I needed some inspiration for the kitchen! I tend to make easy things during the week for breakfast and lunch because of home educating and dinners for 3 seasons here tend to be soup/stews. I have a hard time liking cooking sometimes because it seems to be a full time job here with 8 people! Rosemary ham 'n potato is the children's favorite...potatoes, ham, chopped, chix broth, rosemary, bay leaf, salt & pepper and a little butter in the crockpot on low for the whole afternoon makes for a good dinner for the family. I need to stay away from sugar/bad carbs so I try to eat salads, eggs, oatmeal, protein, veggies etc. Always trying to loose my pg weight.

  3. Yum! That sounds really good, Amy! I'm going to make that sometime soon! Being Irish I have a soft spot for potatoes!
    I've been working really hard at loosing the last of my pg weight too! I gained soooo much weight when I got pregnant-a good 50 lbs, and I still have the last 15 to go! lol

  4. Well, since you invited a comment, I will jump in. I have read your blog for a long time and love it! I am old enough to be your mother and I'm out of the baby stage by far but love reading your experience as a new mother and homemaker. Your daughter is absolutely adorable!

    So...for you question. I will share an easy dinner I actually had tonight. Super simple and I'm sure you have probably had it before. But I like to put a pat of butter on foil with a chicken tenderloin. I add onions, green pepper, potatoes and mushrooms. Salt and pepper. So good and easy! You can add anything you like really.

    I have always wanted to ask. How do you pronounce your daughters name?

    I am not much of a commenter but I will continue to read! :)

    That sounds delicious. I was thinking of making chicken something tonight, and that might just be the thing! Mushrooms are my favorite, so I'm sure I'll put a LOT in ;)
