Overnight Oats in a Jar.


I love eggs. I eat them almost every morning for breakfast. However, some days, especially when I plan on having a big salad with hardboiled eggs for lunch, I like to change things up a bit. 
Enter overnight oats. 
I'm not a huge fan of oatmeal, but after I tried these soaked oats the first time I was hooked. They are super easy, taste wonderful and (best part!) are good for you! 

What to do:

Fill your one pint mason jar half full of old fashioned (thick cut) oats.
Pour just enough milk to cover them, add half a teaspoon of lemon juice, and stir well

Let sit overnight.

In the morning start adding whatever you want. In this particular jar I put in yogurt, maple syrup, raisins, and cinnamon. You could also add honey, more milk, fruit, nuts, berries, etc.

Give everything a good stir and dig in! 

Some good combination variations would be:

+apple chunks, cinnamon, honey and a bit of apple juice.
+shredded coconut, maple syrup and walnuts.
+blueberries, honey, and slivered almonds.
+bananas, maple syrup, vanilla, and a bit of peanut butter.

Really, the possibilities are endless!

  2. I remember Madaleine Kamman, who had an early cooking tv, show saying that in Switzerland they always set out a pan of oatmeal and covered it with millk, overnight, and did not then cook it....Such a smart idea.
