Cabbage Salad Recipe.


Roughly chop 1/2 a head of cabbage {you can use half white and half purple if you like}.
One onion, finely chopped.
Three carrots, grated. 
Three celery stalks, chopped.

Mix in a bowl.

In another bowl add:

Juice and grated rind from half a lemon.
 1 cup of yogurt.
1/2 cup of good olive oil.
Salt, pepper and sugar to taste. 
A handful of poppy seeds.
Enough whole milk to thin things out.

Mix together well and pour over the veggies.
Mix everything together well. 

If you like, you can add raisins, walnuts, and/or apples to this to make it a bit sweeter.

  3. This sounds good. I make one slightly different, but the same concept.

    For the dressing I use half Greek yogurt and half olive oil mayo. We add a splash of cider vinegar, too.

    One of our favorites is carrot/apple/raisin salad although we've grown to love it even more with craisins. I've switched to using Greek yogurt in it instead of mayo.
