Tennessee Cobbler

This is our friend Hannah's cobbler recipe. It's quick, delicious, and perfect served with warm, with vanilla ice cream on top.


The Recipe:


Mix 2 cups of fruit-any kind you like-with sugar and vanilla, to taste.


In a mixing bowl measure:

1 cup flour
1 cup sugar
1 T. baking powder
1/2 t. salt

Mix well.


Add:
1 egg (beaten)
1-1 1/2 cups milk

Mix well, again.



Melt 1 stick of butter your cobbler pan in the hot oven (it works best to do this while you are mixing the rest of the ingredients).


Pour the batter into the pan, over the melted butter.

Spread the fruit filling over the batter- do NOT stir.



Bake at 350 degrees 'till edges are golden brown and the middle is done,
35-40 minutes.

  3. I love this recipe! Sooooo easy and quick. I can do this without looking at a book, I have actually made it that much. We love blackberry, but I think peach is my favorite. Apples are good done this way, just stew them a bit first.

  6. hehe...I am guessing this is the recipe from Hannah West? :) I have their DVDs and she said in one of them, how the cobbler was her favorite and she makes it *a lot*! :)
